Colorful Fried Rice

I actually was looking for a nice dish to make special dinner for our family.  But it has been heavy snowing and raining all day all night for 2 days . I couldn’t go outside.  So I have to cook whatever ingredients I have in my fridge. Thanks God I have the last lot of fresh shrimps and some vegetables at home.  Then the colorful fried rice, beautiful and healthy dish, was appeared in my mind.
This fried rice is fragrant and tasty by the chili paste. The pieces of mixed vegetables give the dish color and sweet taste.  I served this fried rice with fresh salad for side dish. It was great taste.
Ingredients
  • Cooked white or brown rice 3 cups
  • ¼ cup each of  Red bell pepper, green bell pepper, and carrot, cut into small cubes
  • Cauliflower ¼  cup,  cut into small size florets
  • Sweet corn ¼ cup
  • Chili paste in soy bean oil 3 tbsp
  • Salt ¼ tsp
  • Oyster sauce 1  tbsp
  • Fish sauce 1  tbsp or substituted with ½ tsp of salt
  • Sweet basil leaves 1 handful
  • 5-6  Fresh large shrimps,  peeled and cut into small piece or use whole shrimp
  • Garlic 2 cloves, crushed
  • Olive oil or vegetable oil 3  tbsp


How to cook
  1. Mix rice with the chili paste until well combined, set aside
  2. Heat oil in a wok or large skillet, fry garlic until fragrant. Add shrimps and cook until they turn pink.
  3. Stir in vegetables until thoroughly cooked.
  4. Add oyster sauce and rice mixed with chili paste. Stir constantly until the rice is heat through.
  5. Stir in basil leaves, reduce to low heat and cover. Let cook on slow flame for 10 minutes.
  6. Serve hot with cucumber, hard boiled egg and green lettuce.

    Thanks for impressing on my photos. All pictures from my recipes are taken from normal digital camera. I just find the enough light spot to take them. The food is actually colorful itself. For this recipe if you prefer in vegetarian style you can use fried tofu or cooked red kidney beans instead of shrimp. I guarantee it will turn out great. :)

      No new camera yet :>( , but thanks for the compliment. There are actually quite a few vegetarian Thai recipes as a good part of the population in the south are Muslim. Stay tuned…

      Oh, I just noticed which post this was and it’s not my pictures. The post was done by a friend of my wife. She should also have some good vegetarian recipes as she is Thai and married to a Pakistani guy…here’s one for Red bean Curry and another for Mixed Sabzi.

      It is both and so typical of Thai cooking, using whatever ingredients are at hand to come up with flavorful and nutritious meals.
