Grilled Eggplant Salad

Whenever I and my husband want to be on a diet. We always look for healthy and low fat food. Salad is the best option for us. Of course Thai spicy salad is our favorite. We are fans of eggplant. Since it’s very healthy vegetable, nice deep glossy purple color. Eggplants are also rich source of dietary fiber, vitamins and minerals while contain very less calories. When I bring eggplant to grill, the smell is so nice. And when it’s mixed with spicy salad AAUMM I bet you will love it.
Ingredients;
  • 1 Large Eggplant  (about 500 g), sliced to 1 cm. thick
  • Minced Chicken     1/3 cup
  • 2  Nice Large fresh shrimps, rinsed and peeled but left the tails
  • Tiny cube cut carrot     1/3 cup
  • Chopped Onion       ¼ cup
  • Chopped mint leaves      ¼ cup
  • Chopped green chili      1  tbsp
  • Lemon juice        3 tbsp
  • Brown sugar        1 tbsp + 1 tsp
  • Boiled water      2 tbsp
  • Salt      1 tsp
  • Olive oil or cooking spray
  1. In a small microwavable bowl, mix brown sugar, salt and boiled water together. Microwave at High for 1 minute, set aside.
  2. Brush both sides of eggplant slices with olive oil or coat with cooking spray. Grill on a large skillet or griller until nicely brown and soft, turn over and do the same with other sides. The eggplant slices should be soft but still firm.  Set aside.
  3. In a small saucepan, bring 1 cup of water to boil over medium heat. Add minced chicken until it’s cooked thoroughly. Add shrimps and cook until they turn pink. Strain and set aside.
  4. Put cooked minced chicken and shrimps in a large bowl, along with chopped onion, carrot, green chili, salt and sugar mixture and lemon juice. Stir well, add chopped mint leaves and stir just to combine.
  5. Arrange the biggest grilled eggplant slice on the plate, spoon salad and spread over eggplant slice, cover with another smaller grilled eggplant slice, then salad until you get enough high eggplant salad tower. Top with a spoon of salad and Shrimp.
  6. Serve with steam white rice or simple garlic brown bread toast.

    Uffaq, try it out. It is really yummy as its look. Soft smooth sweet grill eggplant with crunchy carrot, that’s really good combination. :D
