Laab Woonsen Tod( Spicy Glass noodle-Chicken balls)

If you like Yum woonsen (glass noodles salad) and Laab (hot and spicy minced chicken salad) don’t miss this menu.
When I lived in Thailand and the Chinese Nine Emperor Gods Festival started I loved to have vegetarian food once a week. I didn’t know about this thing very much but I just really liked that various vegetarian food were available every where. My very favorite one was Laab woonsen, the spicy vegetarian glass noodle salad, made from glass noodles and tofu. The taste is always awesome for me. But when I cooked in the salad style my husband didn’t like it. I want him to have great food and good Thai taste. So I end up with making them in the balls and deep fry. I would like you to try out too.
Glass noodles (also known as  Mung bean noodles , Cellophane noodles , Vermicelli, bean threads, or crystal noodles) are a type of transparent Asian noodles made from mung bean starch. You can get if from Asian grocery or sometimes they are available in the general supermarkets too. Look for Asian stuff in your favorite supermarket.
Ingredients
  • Mung bean noodles 50 g ( 1 small bundle )
  • Minced Chicken 200 g, squeezed juice from meat
  • A  Half  Onion,  chopped
  • Roasted rice powder ¼  cup
  • Salt 2 ½  tsp
  • 1 Big fresh and juicy lime
  • Brown sugar ½  tbsp
  • Roasted chili pepper powder ½ –   1 tbsp
  • Chopped cilantro 1 tbsp
  • Chopped mints 1 tbsp
  • Chopped spring onion 1 tbsp
  • Corn Starch 1 ½  tbsp  or  All purpose flour 2  tbsp
  • 2 eggs
  • Milk ¼ cup
  • Bread crumb
  • Canola oil for deep fry
  • salad and fried chilies for garnish
  1. Prepare glass noodles by soaking  them in water for 5-10 min.  Drain well,  cut to 1 cm. length, and set aside.
  2. In the large bowl, mix all ingredients except eggs, milk , and bread crumb.
  3. Take a small bite in a microwavable plate. Microwave for 30 seconds to check that you get the taste you like.
  4. Beat eggs with milk ,  pour bread crumb in a tray or big plate, and heat oil in the skillet.
  5. Shape the mixture to  1 ½ inch-balls, coat the balls in beaten egg then roll them on the bread crumb. Set them in a large plate.
  6. Fry all balls on the medium-high heat until golden brown. Strain well  to get rid of exceed oil then arrange the balls on the plate.
  7. Serve with fresh salad and fried chilies.

Tips

  • Corn starch or flour helps holding ingredients when shaping in a ball.
  • Try to keep less juice as much as you can in your ingredients to avoid the balls broken while frying.
