Spicy Mango Chutney

This spicy mango chutney is a perfect Thai style accompaniment to duck, chicken, fish and lamb.

MAKES ABOUT 1¼ CUPS

  • 2 tablespoons (¼ stick) butter
  • 1 cup finely chopped onion
  • ¾ teaspoon minced garlic
  • 1 Granny Smith apple, peeled, cored, chopped
  • 1 medium mango, peeled, pitted, chopped
  • ¼ cup apple cider vinegar
  • ¼ cup sugar
  • ½ teaspoon dried crushed red pepper
  • ¼ teaspoon dried thyme

Melt butter in heavy medium saucepan over medium heat. Add onion and garlic. Sauté until translucent, about 5 minutes. Add remaining ingredients. Simmer until mixture thickens slightly, stirring often, about 15 minutes. Season with salt and pepper.
